Today’s recipe is Easy Chicken Divan, the first casserole I began to constantly tweak. It was the late 70’s and the cheesy mix of chicken, sauce and broccoli was rich and comforting. The first recipe I used came right off a can of Campbell’s Golden Mushroom Soup. Yes, “golden,” not the paste-like, pallid regular mushroom soup. (True confession: I still keep a can in the pantry for quick sauces when mixed good-quality sherry, additional fresh mushrooms and fresh thyme.) That ’70’s-something Chicken Divan recipe also had a full cup of mayo, which — let’s face it, upped the comfort aspect to a “Hallelujah” chorus. That recipe also required 1 hour of baking. Some days that’s fine, but with a busy work week, no thank you. Today I offer one of my streamlined versions adapted from a Sargento recipe. The dish is on the table in 30 minutes: Winner, winner chicken dinner.

Easy Chicken Divan
Yield: 4 servings

1 tablespoon olive oil
1/4 cup diced sweet yellow onion
1 cup sliced button mushrooms
3 tablespoons butter
3 tablespoons all-purpose flour
2 teaspoons chicken bouillon granules
1/2 teaspoon dry mustard
2 cups milk
3/4 cup shredded Swiss cheese, divided
2 cups diced cooked chicken
4 1/2 cups fresh broccoli florets, cooked and drained
Paprika and any fresh garden herbs for garnish

1. Heat the olive oil in a skillet on medium-high. Saute the onions until translucent and browned on the edges. Stir in the mushrooms and cook until soft and cooked through, about 5 minutes.
2. Melt butter in medium saucepan. Blend in flour, bouillon granules and mustard; gradually stir in milk. Cook over medium heat, stirring constantly, until mixture comes to a boil and thickens.
3. Remove from heat; add 1/2 cup cheese and stir until melted. Add chicken to sauce and keep warm.
4. Place broccoli in a 2-quart baking dish. Top with mushroom and onion mixture. Pour chicken and sauce on top; finish with remaining cheese and a sprinkling of paprika. Place dish under preheated broiler 3 minutes or until cheese is melted and bubbly.
