Chef Plank From Disney Springs Shares His Recipe For Rigatoni Calabrese

I spoke with Chef Justin Plank from Terralina Crafted Italian at Disney Springs and he shared the secret recipe for one of their most popular dishes! If you're ready to "WOW" your family, check out this recipe for Rigatoni Calabrese:



  • 1lb Rigatoni Pasta
  • ½ lb Italian sausage
  • ¼ cup Kalamata olives, chopped
  • 1 cup Mushrooms, sliced
  • 1 cup Chicken broth
  • 2 cups Escarole, chopped
  • ¼ cup Garlic, shaved
  • ½ cup Tomatoes, diced
  • ¼ cup Butter
  • Salt & Pepper to taste

To Make:

  • Cook Pasta al dente and reserve
  • Sauté sausage, mushrooms, garlic until nicely browned
  • Deglaze with chicken broth
  • Reduce liquid by half
  • Add butter and tomatoes, cook for 30 secs
  • Finish with escarole, salt, pepper and pasta
  • ENJOY!
